Grape crisp cakes adorn the displays of modern Asian cake shops where grapes are a popular ingredient but don’t really seem to be part of the Western cake repertoire. Grapes really do lend themselves to cakes with their sweet, crisp texture.

This grape crisp cake is a light sponge cake with whipped cream, fresh grapes and Asian coconut jelly cubes. I always think of this as an Asian dessert but I was very surprised when I received a thank you message from my Anglo Australian next door neighbour who I had given some of this cake to. She proclaimed it the best cake she had ever eaten.

Cutting cakes out of a sheet cake of sponge gives the cake a more professional finish and is how some bakeries get those beautiful even layers and sides.
